Haute Cabrière Unwooded Pinot Noir comes from the Franschhoek region in South Africa, cultivated on sandy and sandstone-rich soils in relatively young vineyards (3–8 years old). The grapes are hand-harvested and given a short cold soak (about four days), followed by gentle fermentation at cool temperatures before the wine is pressed off the skins and fermented entirely in stainless steel. With no oak influence, this wine emphasises purity of fruit and freshness. Alcohol is around 12.5% for some vintages.
