Hermanuspietersfontein’s Posmeester Merlot — under the 1855 label — is sourced from vineyards in Sondagskloof (Walker Bay). The vines sit at altitudes between 200–297 meters, planted on well-drained soils with a significant clay component. The winemaking includes a 3–4 day cold maceration, extended maceration after fermentation, and malolactic conversion carried out in tank. It is matured for 3–6 months in older French oak (3rd–5th fill), after which it rests in bottle for 12 months before release. This wine has an ageing potential of 3–5 years
