TASTING NOTES:

Nose: A bouquet of bright red fruits — cherry, raspberry, redcurrant — layered with subtle floral notes (violet, rose petals), gentle spice and light earthiness. Delicate but expressive, with a freshness that reflects Sancerre’s chalky‑clay soils and cool climate.

Palate: Medium-bodied yet refined, with juicy red‑berry flavours — sour cherry, cranberry, wild raspberry — framed by fine tannins, lively acidity and a slight mineral lift. A hint of spice and subtle herbal/earthy undertones add complexity without masking the fruit.

Finish: Elegant and lingering, with fresh red‑fruit echoes, a touch of minerality and understated spice — clean, balanced and refined, leaving a lasting impression of freshness and finesse.

Pascal Jolivet Sancerre Rouge is 100% Pinot Noir grown in the historic vineyards of Sancerre in France’s Loire Valley (villages such as Bué, Verdigny and Sainte‑Gemme). The soils are predominantly calcareous and clay‑limestone — classic for Sancerre — lending minerality and finesse. The grapes are hand‑harvested and destemmed, and the wine undergoes a cold maceration of about 10 days followed by a 12‑15 day fermentation in temperature‑controlled stainless steel vats using natural yeasts. Parcels are vinified separately to preserve terroir expression before blending for bottling.
