Paul Clüver Estate Pinot Noir is made at the family’s Elgin Valley estate, where cool-climate vineyards (200–400 m elevation) and Bokkeveld shale soils allow slow, even ripening. The grapes are hand-harvested and individually berry-sorted, then undergo a gentle cold maceration (6–8 days) before wild fermentation. The wine is matured for around 12 months in French oak barrels—some new, some older—to marry elegance with subtle structure.
