Chamonix Reserve Pinot Noir is produced from 100% Pinot Noir grapes grown on steep, terraced slopes at altitudes between 450 and 600 metres on south-southwest-facing vineyards with medium-packed calcareous-clay soils. After hand-harvest and whole-berry destemming (but not crushing), the wine undergoes fermentation in wooden and concrete vats on indigenous yeasts, with cap-management (punchdowns) over a skin contact period of around 16 days. Malolactic fermentation occurs naturally, and the wine is matured for 15–18 months in French oak (225 L barriques, with roughly 40–60% new oak depending on vintage).
