MEERLUST RUBICON RED BLEND

Why is it Special?

What makes Rubicon special is its Legacy of Defiance. At a time when single-varietal wines dominated the market, Meerlust dared to create a blend that prioritised the “sum of its parts.” It is “Special” because of its Maritime Precision—the proximity to False Bay gives it a unique salty-liquorice and graphite character that is the hallmark of the estate. It is widely considered a “Must-Have” for collectors, known for evolving beautifully over 10 to 30 years in the cellar, transforming from a tight, fruit-driven red into a complex, savoury masterpiece.

Tasting Notes

Nose: An aristocratic and perfumed bouquet. Expect intense aromas of cassis, ripe plums, and violets, followed by sophisticated layers of cedarwood, graphite, and a hint of fennel or liquorice.

Palate: Full-bodied yet remarkably poised. The palate is a dense tapestry of fresh dark fruits and mulberry, supported by fine-grained, linear tannins and a refreshing, lifted acidity. There is a beautiful integration of oak, providing a subtle backdrop of savoury spice.

Finish: Exceptionally long and controlled. It leaves a lingering trail of pencil shavings, dark chocolate, and a final, aristocratic whisper of stony minerality.

Product details

The Meerlust Rubicon is a world-renowned Bordeaux-style blend, predominantly composed of Cabernet Sauvignon, with significant portions of Merlot, Cabernet Franc, and a touch of Petit Verdot. Sourced from the historic Meerlust Estate in Stellenbosch, where cool Atlantic breezes provide the perfect microclimate, this wine is defined by its “Old World” restraint and architectural structure. Matured for approximately 18 to 24 months in French oak, Rubicon is celebrated for its finesse, balance, and extraordinary ageing potential. It is a wine that favours line and tension over brute force, making it a permanent reference point for South African excellence.

Food Pairing

Rubicon is a wine that belongs at a table set for a feast. It is the ultimate companion for Dry-Aged Ribeye or a Slow-Roasted Leg of Karoo Lamb with rosemary and garlic. Its structured tannins and savoury depth make it a spectacular match for Game Dishes like venison medallions or Rich Mushroom Risotto with truffle oil. For a classic pairing, try it with Beef Bourguignon or Braised Oxtail. If you are serving cheese, it is "Special" alongside a Matured Gruyère or an Aged Cheddar, which draws out the wine's subtle mineral and earthy undertones.
