Tasting Notes

Nose: An aristocratic and brooding bouquet. Expect intense aromas of cassis, blackcurrants, and dark cherries, seamlessly interwoven with sophisticated layers of pencil shavings, fine leather, cigar box, and a subtle floral perfume from the Cabernet Franc.

Palate: Full-bodied, multi-layered, and incredibly poised. The palate is a dense tapestry of bramble fruit and bitter chocolate, supported by powerful, fine-grained tannins that provide an architectural structure. There is a magnificent core of savoury spice and earthy minerality.

Finish: Exceptionally long, dry, and commanding. It leaves a lingering trail of tobacco leaf, cedarwood, and a final, aristocratic whisper of stony mineral tension.

The Kanonkop Paul Sauer is a classical Bordeaux-style blend of Cabernet Sauvignon, Cabernet Franc, and Merlot. Sourced exclusively from the estate’s prime vineyards on the lower slopes of the Simonsberg Mountain, the wine is a masterclass in site-specific expression. Matured for 24 months in 100% new French Nevers oak, it is a wine of immense power, structural complexity, and undeniable grace. It is not designed for immediate gratification (though it is stunning upon release); it is built to evolve over two to three decades, rewarding the patient collector with profound secondary characters of leather, truffle, and cedar.
